Ingredients
  

  • 1 pound ground sausage hot or mild, based on preference
  • 1 10-ounce can of diced tomatoes with green chilies (like Rotel, undrained)
  • 1 8-ounce package of cream cheese (cubed for easier melting)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream adds creaminess and tang
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika optional, for extra depth of flavor
  • 1/4 teaspoon crushed red pepper flakes optional, for extra heat
  • Chopped fresh cilantro or green onions for garnish, optional

Instructions
 

Step 1: Brown the Sausage

  • In a large skillet over medium heat, cook the ground sausage, breaking it apart with a wooden spoon, until it's browned and cooked through. Drain any excess grease.

Step 2: Add Ingredients to the Crockpot

  • Transfer the cooked sausage to the crockpot. Add the diced tomatoes with green chilies (do not drain), cubed cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, sour cream, garlic powder, onion powder, smoked paprika (if using), and red pepper flakes (if using).

Step 3: Cook and Stir

  • Set the crockpot to low heat and let everything cook for about 1.5 to 2 hours, stirring occasionally to help the cheese melt evenly.

Step 4: Check for Consistency

  • After 2 hours, stir the dip well to make sure everything is fully melted and combined. If it's too thick, add a splash of milk or cream to loosen it up.

Step 5: Serve and Enjoy

  • Once everything is melted and smooth, switch the crockpot to the warm setting to keep the dip hot. Serve with tortilla chips, crackers, or toasted bread. Garnish with chopped green onions or cilantro if desired.
