For the Strawberry Puree
- 1 cup fresh strawberries hulled and chopped
- 2 tablespoons honey or sugar adjust to taste
- 2 tablespoons water

For the Matcha Layer
- 1 teaspoon matcha powder
- ¼ cup hot water not boiling
- 1 teaspoon honey or sugar optional
For the Latte
- ¾ cup milk of choice dairy, almond, oat, or coconut
- Ice cubes
Step 1: Make the Strawberry Puree
In a blender, add the chopped strawberries, honey (or sugar), and water. Blend until smooth.
For an extra smooth texture, strain the puree through a fine mesh sieve to remove seeds.
Stir in the lemon juice if using. Set the puree aside.
Step 2: Prepare the Matcha
In a small bowl, add the matcha powder.
Pour in the hot (not boiling) water and whisk vigorously in a zigzag motion until the matcha is smooth and frothy. You can use a matcha whisk, milk frother, or small whisk.
Stir in honey or sugar if you prefer a sweeter matcha.
Step 3: Assemble the Latte
Fill a tall glass with ice cubes.
Pour the strawberry puree into the glass first.
Gently pour the milk over the strawberry layer.
Finally, slowly pour the prepared matcha on top. To help create clean layers, use the back of a spoon to pour the matcha over.
Stir before drinking and enjoy!
