For the Beef and Potatoes
- 2 lbs beef stew meat cut into bite-sized pieces
- 1 ½ lbs baby potatoes halved
- 4 tbsp unsalted butter melted
- 5 cloves garlic minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp dried Italian seasoning
- ½ tsp onion powder
- ½ tsp red pepper flakes optional, for spice
- ½ cup beef broth
For Garnish (Optional)
- 2 tbsp fresh parsley chopped
- Grated Parmesan cheese
Step 1: Prepare the Ingredients
Cut the beef stew meat into bite-sized pieces if not already pre-cut.
Wash and halve the baby potatoes. If they’re large, cut them into quarters.
Mince the garlic and chop the parsley for garnish.
Step 2: Season the Beef and Potatoes
In a small bowl, mix together the melted butter, minced garlic, salt, black pepper, paprika, Italian seasoning, onion powder, and red pepper flakes.
Place the beef and potatoes into the slow cooker and pour the butter mixture over them. Toss everything together until well coated.
Step 3: Cook Low and Slow
Pour ½ cup of beef broth into the slow cooker to keep everything moist and flavorful.
