Equipment

  • Mixing Bowl
  • Whisk or fork
  • Non-stick skillet or griddle
  • Spatula
  • Measuring cups and spoons

Ingredients

For the Keto French Toast Batter:

  • 2 large eggs
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered erythritol or your preferred keto sweetener
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg optional, for added warmth
  • Pinch of salt

For the Bread:

  • 4 slices of keto-friendly bread store-bought or homemade; almond flour or coconut flour bread works great

For Cooking:

  • 1 tablespoon unsalted butter for frying

Optional Toppings:

  • Sugar-free maple syrup
  • Fresh berries like raspberries or strawberries
  • Whipped cream unsweetened or lightly sweetened with keto sweetener
  • Crushed nuts e.g., pecans or almonds

Instructions

Step 1: Prepare the Batter

  • In a mixing bowl, whisk together the eggs, heavy cream, vanilla extract, powdered erythritol, cinnamon, nutmeg (optional), and a pinch of salt. Whisk until well combined and smooth.

Step 2: Preheat the Skillet

  • Heat a non-stick skillet or griddle over medium heat.
  • Add the butter and allow it to melt completely, spreading it evenly across the pan.

Step 3: Soak the Bread

  • Dip a slice of keto bread into the batter, making sure both sides are fully coated. Let it soak for 10-15 seconds per side to absorb the flavors.

Step 4: Cook the French Toast

  • Place the soaked bread onto the preheated skillet. Cook for 2-3 minutes on each side, or until golden brown and slightly crispy on the edges.
  • Repeat with the remaining slices, adding more butter to the skillet as needed.

Step 5: Serve and Enjoy

  • Plate the French toast and top with your favorite keto-friendly toppings, such as sugar-free syrup, berries, or whipped cream.
  • Serve immediately and enjoy your low-carb breakfast masterpiece!
