Main Ingredients
- 1 lb 450g ground beef
- 3 potatoes diced
- 1 small onion chopped
- 2 cloves garlic minced
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika optional, for extra flavor
- ½ tsp dried oregano or thyme optional
Optional Add-Ins
- 1 bell pepper diced
- ½ cup shredded cheese cheddar, mozzarella, or your favorite
- ½ tsp red pepper flakes if you like a little spice
- 1 cup spinach or kale for extra nutrition
For Serving (Optional)
- Fresh parsley chopped
- Sour cream or Greek yogurt
- Hot sauce
Step 1: Prep the Ingredients
Wash and dice the potatoes into small, bite-sized cubes (about ½-inch pieces).
Finely chop the onion and mince the garlic.
If using bell peppers or other veggies, chop them as well.
Step 2: Cook the Potatoes
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the diced potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften and get a slight golden color.
Remove the potatoes from the pan and set them aside.
Step 3: Brown the Ground Beef
In the same skillet, add the ground beef and break it apart with a wooden spoon.
Cook for about 5 minutes until it starts to brown. Drain excess fat if necessary.
Add the chopped onion and minced garlic, then cook for another 2-3 minutes until the onion becomes soft and fragrant.
Step 4: Combine Everything
Return the cooked potatoes to the skillet with the beef.
Season with salt, pepper, paprika, and oregano. Stir well to combine.
If using bell peppers or spinach, add them now and cook for another 2-3 minutes until they soften.
Step 5: Serve and Enjoy!
Turn off the heat and sprinkle shredded cheese on top, if using. Let it melt for a minute.
Garnish with fresh parsley and serve with sour cream or hot sauce if desired.
