Ingredients
  

Main Ingredients

  • 1 lb 450g ground beef
  • 3 potatoes diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika optional, for extra flavor
  • ½ tsp dried oregano or thyme optional

Optional Add-Ins

  • 1 bell pepper diced
  • ½ cup shredded cheese cheddar, mozzarella, or your favorite
  • ½ tsp red pepper flakes if you like a little spice
  • 1 cup spinach or kale for extra nutrition

For Serving (Optional)

  • Fresh parsley chopped
  • Sour cream or Greek yogurt
  • Hot sauce

Instructions
 

Step 1: Prep the Ingredients

  • Wash and dice the potatoes into small, bite-sized cubes (about ½-inch pieces).
  • Finely chop the onion and mince the garlic.
  • If using bell peppers or other veggies, chop them as well.

Step 2: Cook the Potatoes

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the diced potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften and get a slight golden color.
  • Remove the potatoes from the pan and set them aside.

Step 3: Brown the Ground Beef

  • In the same skillet, add the ground beef and break it apart with a wooden spoon.
  • Cook for about 5 minutes until it starts to brown. Drain excess fat if necessary.
  • Add the chopped onion and minced garlic, then cook for another 2-3 minutes until the onion becomes soft and fragrant.

Step 4: Combine Everything

  • Return the cooked potatoes to the skillet with the beef.
  • Season with salt, pepper, paprika, and oregano. Stir well to combine.
  • If using bell peppers or spinach, add them now and cook for another 2-3 minutes until they soften.

Step 5: Serve and Enjoy!

  • Turn off the heat and sprinkle shredded cheese on top, if using. Let it melt for a minute.
  • Garnish with fresh parsley and serve with sour cream or hot sauce if desired.
