For the Stir Fry
- 2 packs instant ramen noodles discard seasoning packets
- 1 lb 450g boneless, skinless chicken breast (sliced thin)
- 2 tbsp vegetable oil
- 1 red bell pepper sliced
- 1 cup broccoli florets
- 1 medium carrot julienned
- 3 green onions chopped
- 2 cloves garlic minced
- 1 tsp ginger grated
- 1 tbsp sesame seeds for garnish, optional
For the Sauce
- ¼ cup soy sauce
- 1 tbsp oyster sauce
- 1 tbsp honey or brown sugar
- 1 tsp sriracha adjust to taste
- 1 tsp sesame oil
- ¼ cup chicken broth or water
- 1 tsp cornstarch to thicken
Step 1: Cook the Ramen Noodles
Bring a pot of water to a boil.
Add the ramen noodles (without the seasoning packet) and cook for 2-3 minutes until just soft. Avoid overcooking, as they will continue cooking in the stir fry.
Drain the noodles and rinse with cold water to stop the cooking process. Set aside.
Step 2: Prepare the Sauce
In a small bowl, whisk together soy sauce, oyster sauce, honey, sriracha, sesame oil, chicken broth, and cornstarch until smooth.
Set aside for later.
Step 3: Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken and cook for 4-5 minutes, stirring occasionally, until golden brown and fully cooked.
Remove the chicken from the pan and set it aside.
Step 4: Stir-Fry the Vegetables
In the same pan, add the remaining 1 tablespoon of oil.
Add the bell peppers, broccoli, and carrots. Stir-fry for 3-4 minutes until slightly tender.
Add the garlic, ginger, and green onions, and stir for another minute until fragrant.
Step 5: Combine Everything
Return the cooked chicken to the pan with the vegetables.
Pour in the prepared sauce and stir well to coat everything evenly.
Add the cooked ramen noodles and toss everything together until the sauce thickens and coats the noodles.
Cook for another 1-2 minutes, then remove from heat.
Step 6: Garnish and Serve
