For the Chicken and Potatoes
- 4 boneless skinless chicken breasts (or thighs)
- 1.5 lbs baby potatoes halved (red or Yukon gold work best)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Garlic Parmesan Sauce
- 4 tablespoons unsalted butter
- 4 cloves garlic minced
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes optional, for a little kick

- Fresh parsley chopped
- Additional grated parmesan cheese
Step 1: Prep the Ingredients
Wash the baby potatoes thoroughly and cut them in half. If the potatoes are large, quarter them.
In a mixing bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, parsley, salt, and pepper.
Step 2: Layer the Crockpot
Lightly grease the inside of your slow cooker with cooking spray or a little olive oil.
Place the seasoned potatoes at the bottom of the crockpot.
Season the chicken breasts with a little salt and pepper, then lay them on top of the potatoes.
Step 3: Make the Garlic Parmesan Sauce
In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant.
Stir in the heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Cook for 2-3 minutes until the sauce is smooth and slightly thickened.
Pour the sauce over the chicken and potatoes in the crockpot.
