Ingredients
  

For the Chicken and Potatoes

  • 4 boneless skinless chicken breasts (or thighs)
  • 1.5 lbs baby potatoes halved (red or Yukon gold work best)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Garlic Parmesan Sauce

  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional, for a little kick

Optional Garnish

  • Fresh parsley chopped
  • Additional grated parmesan cheese

Instructions
 

Step 1: Prep the Ingredients

  • Wash the baby potatoes thoroughly and cut them in half. If the potatoes are large, quarter them.
  • In a mixing bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, parsley, salt, and pepper.

Step 2: Layer the Crockpot

  • Lightly grease the inside of your slow cooker with cooking spray or a little olive oil.
  • Place the seasoned potatoes at the bottom of the crockpot.
  • Season the chicken breasts with a little salt and pepper, then lay them on top of the potatoes.

Step 3: Make the Garlic Parmesan Sauce

  • In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Stir in the heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Cook for 2-3 minutes until the sauce is smooth and slightly thickened.
  • Pour the sauce over the chicken and potatoes in the crockpot.

Step 4: Cook

  • Cover the crockpot with its lid and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked and tender, and the potatoes are soft.

Step 5: Garnish and Serve

  • Sprinkle with fresh parsley and extra parmesan cheese before serving. Enjoy with a side salad or some crusty bread to soak up the sauce!
