Ingredients
  

For the Chicken

  • 2 large boneless skinless chicken breasts (or 4 small ones)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • For the Creamy Sauce
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach

Instructions
 

Step 1: Prepare the Chicken

  • If using large chicken breasts, slice them in half horizontally to create thinner cutlets. This helps them cook faster and more evenly.
  • Season the chicken on both sides with salt, pepper, garlic powder, and Italian seasoning.

Step 2: Cook the Chicken

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the chicken and cook for about 5-6 minutes per side, or until golden brown and cooked through.
  • Once done, transfer the chicken to a plate and set aside.

Step 3: Make the Creamy Sauce

  • In the same pan, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and use a spoon to scrape up any browned bits from the bottom of the pan (this adds tons of flavor!).
  • Lower the heat and stir in the heavy cream, parmesan cheese, and Italian seasoning. Let the sauce simmer for 2-3 minutes, stirring occasionally.
  • Add the fresh spinach and cook until it wilts, about 1 minute.

Step 4: Combine Everything

  • Return the cooked chicken to the pan, spooning the creamy sauce over the top.
  • Let everything simmer together for another 2-3 minutes to blend the flavors.
  • Taste and adjust seasoning if needed.

Step 5: Serve and Enjoy!

  • Serve your creamy Tuscan chicken over pasta, rice, or alongside crusty bread to soak up the sauce. Garnish with extra parmesan cheese if you like!
