  • 1 cup pastina tiny pasta like stars or orzo
  • 1 egg
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon butter
  • Salt and black pepper to taste

Optional Add-Ins:

  • ½ cup shredded cooked chicken for extra protein
  • ½ cup chopped spinach or kale for a veggie boost
  • A sprinkle of fresh parsley for garnish

Instructions
 

  • Heat the Broth – In a medium saucepan, bring the chicken or vegetable broth to a gentle boil over medium heat.
  • Cook the Pastina – Add the pastina pasta to the boiling broth and stir occasionally. Let it cook for about 5-6 minutes or until tender.
  • Prepare the Egg Mixture – In a small bowl, whisk the egg with the Parmesan cheese. This will create a creamy texture when added to the soup.
  • Add the Egg Mixture – Reduce the heat to low and slowly pour the egg mixture into the pot, stirring constantly. This will create delicate egg ribbons in the soup.
  • Stir in Butter – Add the tablespoon of butter for extra richness and stir until melted.
  • Season and Serve – Taste the soup and add salt and black pepper as needed. If you’re adding shredded chicken, spinach, or parsley, mix them in now. Serve warm and enjoy!
