Ingredients

  • 2 lbs chicken wings drumettes and flats
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Buffalo Sauce:

  • ½ cup hot sauce like Frank's RedHot
  • ¼ cup unsalted butter melted
  • 1 tbsp honey optional, for a hint of sweetness
  • 1 tsp Worcestershire sauce

Optional for Serving:

  • Carrot and celery sticks
  • Ranch or blue cheese dressing

Step 1: Preheat Your Oven

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup, and place a wire rack on top. This setup ensures your wings cook evenly and achieve a crispy texture.

Step 2: Prep the Chicken Wings

  • Pat the wings dry with paper towels. This step is crucial for crispy skin.
  • In a large mixing bowl, combine baking powder, garlic powder, smoked paprika, salt, and black pepper. Toss the wings in the mixture until evenly coated.

Step 3: Bake the Wings

  • Arrange the wings in a single layer on the wire rack. Make sure they aren’t touching to allow for even air circulation.
  • Bake for 20 minutes, then flip the wings and bake for another 20-25 minutes until golden brown and crispy.

Step 4: Prepare the Buffalo Sauce

  • While the wings are baking, melt the butter in a small saucepan over low heat.
  • Add hot sauce, Worcestershire sauce, and honey (if using). Whisk until fully combined, then remove from heat.

Step 5: Toss and Serve

  • Once the wings are done, transfer them to a large mixing bowl. Pour the Buffalo sauce over the wings and toss until evenly coated.
  • Serve immediately with carrot and celery sticks, and your favorite dipping sauce.
