  • Small spoon
  • Pastry brush or small bowl of water
  • Large pot
  • Slotted spoon

Ingredients

For the Wontons

  • ½ pound 225g ground pork (or chicken/shrimp)
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 2 green onions finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 20-25 wonton wrappers

For the Broth

  • 6 cups 1.5 liters chicken broth
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon white pepper optional, for a little heat

Optional Toppings

  • Sliced green onions
  • Chopped cilantro
  • Bok choy or spinach
  • Chili oil for extra spice

Instructions

Step 1: Make the Wonton Filling

  • In a mixing bowl, combine the ground pork (or chosen protein), grated ginger, minced garlic, chopped green onions, soy sauce, sesame oil, and cornstarch.
  • Mix everything well until the filling is smooth and evenly combined. Set aside.

Step 2: Fold the Wontons

  • Place a wonton wrapper on a clean surface.
  • Add about 1 teaspoon of filling to the center.
  • Dip your finger in water and run it along the edges of the wrapper.
  • Fold the wrapper in half to form a triangle, pressing the edges to seal.
  • Bring the two bottom corners together and press to seal (you can also leave them as simple triangles if preferred).
  • Repeat until all the filling is used.

Step 3: Make the Broth

  • In a large pot, heat the chicken broth over medium heat.
  • Add grated ginger, minced garlic, soy sauce, sesame oil, and white pepper.
  • Bring the broth to a gentle simmer and let it cook for 5-7 minutes to blend the flavors.

Step 4: Cook the Wontons

  • Bring a separate pot of water to a boil.
  • Carefully drop in the wontons, stirring gently to prevent sticking.
  • Cook for 3-5 minutes or until the wontons float to the top.
  • Use a slotted spoon to transfer the cooked wontons to serving bowls.

Step 5: Assemble the Soup

  • Pour the hot broth over the wontons in each bowl.
  • Add any optional toppings, such as sliced green onions, cilantro, or bok choy.
  • Serve immediately and enjoy!
