Ingredients
  

For the Mushroom Marinade:

  • 2 large Portobello mushroom caps
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce or tamari for gluten-free
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper

For the Burger:

  • 2 burger buns whole wheat, brioche, or gluten-free
  • 2 slices of cheese optional, try cheddar, Swiss, or vegan cheese
  • 2 lettuce leaves
  • 2 slices of tomato
  • 2 slices of red onion
  • ¼ cup mashed avocado or mayo optional

  • Pickles or jalapeños
  • Sautéed onions or mushrooms
  • BBQ sauce pesto, or spicy mayo

Instructions
 

Step 1: Prep the Mushrooms

  • Wipe the Portobello mushrooms clean with a damp paper towel. Remove the stems and scrape out the gills with a spoon (optional, but this helps reduce excess moisture).

Step 2: Make the Marinade

  • In a small bowl, mix together the balsamic vinegar, olive oil, soy sauce, Dijon mustard, garlic powder, and black pepper.

Step 3: Marinate the Mushrooms

  • Place the mushrooms in a shallow dish or a zip-top bag. Pour the marinade over them and let them soak for at least 15 minutes, flipping halfway to coat both sides.

Step 4: Cook the Mushrooms

  • Grill method: Preheat the grill to medium heat. Cook the mushrooms for 4-5 minutes per side, basting with extra marinade as they cook.
  • Stovetop method: Heat a grill pan or skillet over medium heat. Add a little oil and cook the mushrooms for 4-5 minutes per side, until tender.

Step 5: Assemble the Burger

  • Toast the burger buns for extra flavor.
  • Spread mashed avocado, mayo, or your favorite sauce on the buns.
  • Place the grilled Portobello mushroom on the bottom bun. Add a slice of cheese (if using) and let it melt slightly.
  • Top with lettuce, tomato, red onion, and any extra toppings you love.
  • Cover with the top bun and enjoy!
