For the Fried Rice:
- 2 cups cooked jasmine rice preferably chilled
- 1/2 cup diced pineapple fresh or canned
- 1/4 cup diced carrots
- 1/4 cup peas
- 1/4 cup diced onions
- 2 cloves garlic minced
- 2 eggs lightly beaten
- 1/4 cup chopped green onions
- 1/4 cup roasted cashews optional
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce or more soy sauce for a vegetarian version
- 1/2 teaspoon curry powder
- 1/2 teaspoon white pepper
- 1 tablespoon vegetable oil for cooking
For Garnish (optional):
- Lime wedges
- Extra cilantro or basil leaves for freshness
Prepare the ingredients:
Start by chopping your pineapple, carrots, onions, and garlic.
If you're using fresh pineapple, slice it into small bite-sized pieces.
Beat the eggs in a small bowl and set them aside.
Cook the eggs:
Heat the vegetable oil in a wok or large skillet over medium-high heat.
Once the oil is hot, pour in the beaten eggs and scramble them, stirring occasionally until they're cooked through.
Remove them from the pan and set them aside.
Sauté the vegetables:
In the same wok, add a bit more oil if needed and sauté the onions, carrots, and garlic for 2-3 minutes until they start to soften.
Add rice and pineapple:
Add the cooked rice to the wok and stir-fry for 3-5 minutes, making sure the rice is heated through and slightly crispy.
Add the diced pineapple and cook for another 2 minutes, stirring occasionally.
Season and combine:
Add the soy sauce, fish sauce, curry powder, and white pepper.
Stir everything together until well mixed, making sure the rice is evenly coated with the sauce and seasoning.
Finish the dish:
Toss in the cooked eggs, green onions, and roasted cashews (if using).
Stir everything together, and cook for another minute or two until it's heated.
Serve and garnish:
Transfer the fried rice to serving plates and garnish with extra green onions, lime wedges, and fresh herbs like cilantro or basil.
