For the Sandwich
- 2 slices of sourdough rye, or whole-grain bread (toasted, if preferred)
- 3-4 oz smoked salmon
- 2 tbsp cream cheese or Greek yogurt for a lighter option
- 1 tsp lemon juice
- 1/2 tsp Dijon mustard optional, for extra flavor
Fresh Toppings
- 1/4 cup thinly sliced cucumber
- 2-3 slices of ripe tomato
- 1/4 small red onion thinly sliced
- 1 tbsp capers optional, but adds a great tangy flavor
- Handful of fresh arugula or baby spinach
