Ingredients
  

For the Sandwich

  • 2 slices of sourdough rye, or whole-grain bread (toasted, if preferred)
  • 3-4 oz smoked salmon
  • 2 tbsp cream cheese or Greek yogurt for a lighter option
  • 1 tsp lemon juice
  • 1/2 tsp Dijon mustard optional, for extra flavor

Fresh Toppings

  • 1/4 cup thinly sliced cucumber
  • 2-3 slices of ripe tomato
  • 1/4 small red onion thinly sliced
  • 1 tbsp capers optional, but adds a great tangy flavor
  • Handful of fresh arugula or baby spinach

Seasoning & Garnish

  • Fresh dill for garnish
  • Black pepper to taste
  • Everything bagel seasoning optional but delicious!

Instructions
 

  • Prepare the cream cheese spread – In a small bowl, mix the cream cheese with lemon juice and Dijon mustard (if using). Stir until smooth and well combined.
  • Slice the veggies – Thinly slice the cucumber, tomato, and red onion. This helps the sandwich stay balanced and easy to eat.
  • Toast the bread (optional) – If you like a crispy texture, toast your bread until golden brown. This adds a nice crunch to contrast with the soft smoked salmon.
  • Assemble the sandwich – Spread a generous layer of the cream cheese mixture onto both slices of bread. On one slice, layer the smoked salmon, followed by the cucumber slices, tomato, red onion, and capers. Add a handful of fresh arugula or spinach.
  • Season and garnish – Sprinkle black pepper and everything bagel seasoning (if using). Add a few fresh dill leaves for extra flavor.
  • Close and serve – Place the second slice of bread on top, gently press down, and cut in half. Serve immediately and enjoy!
