Equipment

  • Champagne flutes or stemmed glasses
  • Measuring jigger or small measuring cups
  • Small mixing bowl or shaker
  • Spoon or small whisk
  • Small plate or shallow dish
  • Optional: Citrus zester or grater

Ingredients

  • 3 oz chilled sparkling wine Prosecco or Champagne work great
  • 2 oz pumpkin puree canned or homemade
  • 1 oz apple cider
  • ½ oz maple syrup or simple syrup adjust to taste
  • ¼ tsp pumpkin pie spice
  • Cinnamon sugar for rimming the glass, optional

Instructions

Step 1: Prepare the Glasses

  • If you want to rim your glasses with cinnamon sugar, start here.
  • Pour some cinnamon sugar onto a small plate or shallow dish.
  • Lightly wet the rims of your champagne flutes with water or a bit of apple cider.
  • Dip the rims into the cinnamon sugar, twisting gently to coat evenly.
  • Set the glasses aside to let the sugar set while you prepare the drink.
  • Pro tip: Make sure the rim is just damp enough to hold the sugar without it sliding off.

Step 2: Mix the Pumpkin Base

  • In a small bowl or shaker, combine the pumpkin puree, apple cider, maple syrup (or simple syrup), and pumpkin pie spice.
  • Use a whisk or spoon to stir vigorously until smooth and fully blended.
  • Pro tip: Whisk continuously to prevent lumps and ensure a silky texture.

Step 3: Assemble the Mimosa

  • Pour about 2 ounces of your pumpkin mixture into each prepared glass.
  • Slowly add 3 ounces of chilled sparkling wine on top. Pour gently to keep the bubbles lively and avoid overflow.
  • Give the drink a gentle stir with a spoon to combine—avoid vigorous stirring, which can flatten the bubbles.

Step 4: Garnish and Serve

  • If desired, sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top for extra aroma and flair.
  • Serve immediately while the mimosa is chilled and bubbly.
