Equipment

  • Large skillet or frying pan
  • Sharp Knife
  • Cutting board
  • Spatula or tongs
  • Measuring spoons
  • Serving Plate

Ingredients

For the Potatoes:

  • 4 medium potatoes peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

For the Tacos:

  • 8 small corn or flour tortillas
  • 1/2 cup shredded lettuce optional
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

For Toppings (Optional but Recommended):

  • 1/2 cup guacamole or sliced avocado
  • Salsa or hot sauce to taste
  • 1/4 cup sour cream or a dairy-free alternative optional

Instructions

Step 1: Prep the Potatoes

  • Start by peeling your potatoes and cutting them into small cubes, about 1/2-inch in size. This will help them cook evenly and crisp up nicely.
  • Optional but Recommended: If you have time, soak the diced potatoes in water for 10-15 minutes. This helps remove excess starch, leading to crispier potatoes. Drain and pat them dry with a paper towel before cooking.

Step 2: Season the Potatoes

  • In a bowl, combine the smoked paprika, garlic powder, cumin, salt, and pepper. Toss the diced potatoes in the seasoning mixture, ensuring they're coated evenly.
  • Pro Tip: Don't be shy with the seasonings—this is where the flavor really builds!

Step 3: Cook the Potatoes

  • Place a large skillet or frying pan over medium heat and add 2 tablespoons of olive oil. Let it heat up until the oil shimmers.
  • Add the seasoned potatoes to the pan in a single layer. Let them cook undisturbed for 5-7 minutes, allowing the bottoms to crisp up.
  • After 5-7 minutes, use a spatula or tongs to gently stir the potatoes. Cook for an additional 7-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside and tender on the inside.
  • Pro Tip: Don’t overcrowd the pan! If your pan is too full, the potatoes will steam instead of crisping up.

Step 4: Warm the Tortillas

  • While the potatoes are cooking, heat your tortillas in a separate skillet or microwave. For a little extra flavor, warm them in a dry skillet for about 30 seconds on each side until soft and slightly golden.

Step 5: Assemble the Tacos

  • Lay the warm tortillas on a plate. Scoop a generous amount of the crispy potatoes into the center of each tortilla.
  • Top the potatoes with your favorite taco toppings—shredded lettuce, diced tomatoes, onions, cilantro, and a squeeze of lime.

Step 6: Serve and Enjoy

  • Garnish: Optionally, add a spoonful of guacamole or sliced avocado, a dollop of sour cream, and a drizzle of salsa or hot sauce.
  • Serve: Serve the tacos immediately while the potatoes are crispy and warm. Enjoy with your favorite drink!
