Ingredients
  

  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey or simple syrup adjust to taste
  • 1/2 cup cold water
  • 1/2 cup sparkling water or club soda
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lemon slices for garnish

Step 1: Juice the Lemon

  • Cut a fresh lemon in half and use a citrus juicer or reamer to extract the juice.
  • Measure out 2 tablespoons of lemon juice and pour it into a small mixing glass or pitcher.
  • Pro Tip: Roll the lemon on your counter with a little pressure before cutting — it helps release more juice.

Step 2: Add Sweetener

  • Add 1 tablespoon of honey or simple syrup to the lemon juice.
  • Stir well until the sweetener is fully dissolved into the juice.
  • If using honey, it may take a few extra seconds of stirring.
  • Pro Tip: If the honey isn’t mixing easily, warm it slightly or stir in a splash of warm water to help it blend.

Step 3: Mix with Still Water

  • Pour in 1/2 cup of cold water to dilute the lemon-sweetener mix.
  • Stir gently to combine. This creates a balanced base before adding fizz.

Step 4: Add Ice and Sparkle

  • Fill your serving glass with ice cubes (as many as you like).
  • Pour the lemon mixture over the ice, stopping about halfway up the glass.
  • Top it off with 1/2 cup of sparkling water or club soda for that bubbly finish.
  • Give it one gentle stir to mix — don’t overdo it or you’ll lose the fizz.
  • Pro Tip: Pour the sparkling water slowly down the side of the glass to keep it extra fizzy.

Step 5: Garnish and Serve
