Optional Toppings:

Cook the Pasta
Bring a large pot of salted water to a boil.
Add the macaroni and cook according to package instructions until al dente.
Drain the pasta in a colander and toss it with 1 tablespoon of butter to keep it from sticking.
Pro Tip: Don’t overcook the pasta—it will continue to cook slightly when mixed with the cheese sauce.
Make the Green Cheese Sauce
In a medium saucepan over medium heat, melt 2 tablespoons of butter.
Once melted, whisk in the flour until it forms a smooth paste (roux).
Gradually add the milk, whisking constantly to avoid lumps.
Stir in the shredded cheddar, mozzarella, and Parmesan cheese until melted and creamy.
Add garlic powder, onion powder, salt, pepper, and green food coloring (or spinach puree) until fully combined.
Pro Tip: Whisk continuously while adding the milk to keep the sauce silky smooth.
Combine Pasta and Sauce
Pour the drained macaroni into the cheese sauce.
Gently stir until all the pasta is coated evenly with the green cheese.
Taste and adjust seasoning if needed.
Optional Topping & Baking
Preheat the oven to 375°F (190°C).
In a small bowl, mix panko breadcrumbs with melted butter.
Pour the mac and cheese into a greased baking dish and sprinkle the breadcrumb mixture on top.
Bake for 15–20 minutes, or until the top is golden and crispy.
Pro Tip: For an extra cheesy finish, add a little extra shredded cheese on top before baking.
Add Fun “Monster” Touches
For a playful Halloween twist, decorate with candy eyes, sliced olives, or any fun toppings to make your green Mac and cheese “monster-ready.”
Serve immediately while warm and gooey.
