Ingredients
  

For the Pasta:

  • 12 oz elbow macaroni
  • 1 tsp salt
  • 1 tbsp butter

For the Green Cheese Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 2 –3 drops green food coloring or natural spinach puree for a healthier twist

Optional Toppings:

  • 1/2 cup panko breadcrumbs
  • 2 tbsp melted butter
  • Extra shredded cheese for topping
  • Candy eyes or sliced olives for “monster” effect

Instructions
 

Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the macaroni and cook according to package instructions until al dente.
  • Drain the pasta in a colander and toss it with 1 tablespoon of butter to keep it from sticking.
  • Pro Tip: Don’t overcook the pasta—it will continue to cook slightly when mixed with the cheese sauce.

Make the Green Cheese Sauce

  • In a medium saucepan over medium heat, melt 2 tablespoons of butter.
  • Once melted, whisk in the flour until it forms a smooth paste (roux).
  • Gradually add the milk, whisking constantly to avoid lumps.
  • Stir in the shredded cheddar, mozzarella, and Parmesan cheese until melted and creamy.
  • Add garlic powder, onion powder, salt, pepper, and green food coloring (or spinach puree) until fully combined.
  • Pro Tip: Whisk continuously while adding the milk to keep the sauce silky smooth.

Combine Pasta and Sauce

  • Pour the drained macaroni into the cheese sauce.
  • Gently stir until all the pasta is coated evenly with the green cheese.
  • Taste and adjust seasoning if needed.

Optional Topping & Baking

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix panko breadcrumbs with melted butter.
  • Pour the mac and cheese into a greased baking dish and sprinkle the breadcrumb mixture on top.
  • Bake for 15–20 minutes, or until the top is golden and crispy.
  • Pro Tip: For an extra cheesy finish, add a little extra shredded cheese on top before baking.
