Ingredients
  

For the Chicken Filling:

  • 2 cups cooked chicken shredded or diced
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder optional for spice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup bell peppers chopped (any color)
  • ½ cup onions chopped

For the Quesadillas:

  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar, mozzarella, or a mix
  • 1 tablespoon butter for cooking

For Serving (Optional):

  • Salsa
  • Guacamole
  • Sour cream
  • Fresh cilantro

Instructions
 

Step 1: Prepare the Chicken Filling

  • Heat 1 teaspoon of olive oil in a pan over medium heat.
  • Add the chopped onions and bell peppers. Sauté for 2-3 minutes until they soften.
  • Add the cooked chicken, garlic powder, onion powder, chili powder (if using), salt, and black pepper. Stir well to coat the chicken with the seasonings.
  • Cook for another 2-3 minutes until everything is heated through. Remove from heat and set aside.

Step 2: Assemble the Quesadillas

  • Lay a tortilla flat and sprinkle a generous amount of shredded cheese over one half.
  • Spoon some of the seasoned chicken mixture on top of the cheese.
  • Add another layer of cheese on top of the chicken. (This helps the quesadilla stick together!)
  • Fold the tortilla in half, pressing it down gently.

Step 3: Cook the Quesadillas

  • Heat a skillet over medium heat and add a small amount of butter.
  • Place the folded quesadilla in the pan and cook for 2-3 minutes on one side until golden brown.
  • Flip carefully with a spatula and cook the other side for another 2-3 minutes.
  • Remove from the pan and let it cool slightly before slicing into triangles.

Step 4: Serve and Enjoy!

  • Serve warm with salsa, guacamole, or sour cream.
  • Garnish with fresh cilantro for extra flavor.
