Instructions

Step 1: Prepare Your Ingredients

  • If you’re using fresh vegetables, chop them into small pieces.
  • If using frozen veggies, let them thaw for a few minutes.
  • Crack the eggs into a small bowl and whisk them with a pinch of salt.
  • If your rice is clumped together, gently break it apart with your hands or a fork.

Step 2: Cook the Eggs

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  • Pour in the beaten eggs and let them cook for a few seconds until they start to set.
  • Scramble the eggs gently, breaking them into small pieces.
  • Once cooked, remove the eggs from the pan and set them aside.

Step 3: Stir-Fry the Vegetables

  • In the same pan, add the remaining 1 tablespoon of oil.
  • Add the chopped vegetables (or frozen mix) and stir-fry for 2-3 minutes until they soften.

Step 4: Add the Rice

  • Increase the heat to high and add the cooked rice to the pan.
  • Stir the rice constantly for about 3-4 minutes to evenly distribute the heat.

Step 5: Season and Combine

  • Pour the soy sauce over the rice and mix well.
  • Add salt, black pepper, and garlic powder, stirring everything together.
  • Toss the scrambled eggs back into the pan and mix well.
