Ingredients
  

For the Salad

  • 3 cups cooked pasta elbow, rotini, or shells work best
  • 1 cup chopped dill pickles
  • ½ cup shredded cheddar cheese
  • ¼ cup diced red onion
  • ¼ cup chopped fresh dill optional for extra flavor

For the Dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup pickle juice from the jar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste

Instructions
 

  • Cook the pasta – Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Once done, drain and rinse with cold water to stop the cooking process. Let it cool completely.
  • Chop the ingredients – While the pasta cools, finely chop the dill pickles, red onion, and fresh dill (if using). Grate or shred the cheddar cheese.
  • Make the dressing – In a mixing bowl, whisk together the mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasoning if needed.
  • Assemble the salad – In a large mixing bowl, combine the cooled pasta, chopped pickles, red onion, cheddar cheese, and fresh dill. Pour the dressing over the top and stir until everything is well coated.
  • Chill and serve – For the best flavor, cover and refrigerate the salad for at least 30 minutes before serving. This helps the flavors meld together. Serve chilled and enjoy!
