Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the breadcrumbs – In a small bowl, mix the breadcrumbs with milk and let it soak for a few minutes. This step keeps the meatloaf moist.
Sauté the onions and garlic – Heat a small skillet over medium heat, add a bit of oil, and cook the chopped onion and minced garlic until soft. Set aside to cool slightly.
Mix the ingredients – In a large bowl, combine the ground chicken, soaked breadcrumbs, sautéed onion and garlic, egg, ketchup, Worcestershire sauce, mustard, and all the seasonings. Use clean hands or a spoon to mix until well combined.
Shape the meatloaf – Transfer the mixture to the prepared baking sheet and shape it into a loaf. If using a loaf pan, press the mixture evenly into the pan.
Prepare the glaze – In a small bowl, mix together ketchup, brown sugar, Worcestershire sauce, and Dijon mustard. Brush half of the glaze over the meatloaf.
Bake for 45-50 minutes, brushing the remaining glaze on top halfway through the baking time. The meatloaf is done when it reaches an internal temperature of 165°F (74°C).
Let it rest for 5-10 minutes before slicing. This helps the juices redistribute, keeping it moist.
