Equipment

  • Crockpot (Slow Cooker)
  • Cutting Board & Knife
  • Cheese grater
  • Measuring Cups & Spoons
  • Mixing spoon or spatula
  • Serving Bowl (Optional)

Ingredients

Cheese Base

  • 1 lb white American cheese cubed, from the deli section
  • 8 oz Monterey Jack cheese shredded
  • 4 oz cream cheese cubed

Liquid Ingredients

  • 1 cup whole milk or half-and-half for extra creaminess
  • 1/2 cup heavy cream
  • 1/2 cup diced tomatoes with green chilies drained, such as Rotel
  • 1/4 cup diced green chilies mild or hot, depending on preference

Seasonings & Add-ins

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper optional, for extra heat
  • 1/4 cup chopped fresh cilantro optional, for garnish

Instructions

Step 1: Prepare the Ingredients

  • Chop the white American cheese and cream cheese into cubes for easier melting. If using a block of Monterey Jack cheese, shred it using a cheese grater.

Step 2: Add Ingredients to the Crockpot

  • Place all the cheese, milk, heavy cream, diced tomatoes with green chilies, green chilies, and seasonings into the crockpot. Stir to combine.

Step 3: Set the Crockpot to Low Heat

  • Cover the crockpot and cook on low heat for about 1.5 to 2 hours, stirring occasionally. Avoid using high heat, as it can cause the cheese to become grainy.

Step 4: Stir Until Smooth

  • Once the cheese is fully melted, stir well to ensure a smooth and creamy consistency. If the dip is too thick, add a little more milk until it reaches your desired texture.

Step 5: Keep Warm & Serve

  • Once the dip is smooth and ready, switch the crockpot to the “Keep Warm” setting. Serve directly from the crockpot or transfer to a serving bowl. Garnish with fresh cilantro if desired.
