Ingredients
  

For the Chicken and Sauce

  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons Cajun seasoning adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 14.5 oz can diced tomatoes with green chilies (such as Rotel)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 8 oz block cream cheese, cubed
  • 1 cup shredded Parmesan cheese

For the Pasta

  • 12 oz penne pasta or any pasta of your choice
  • 1 tablespoon butter optional, for extra richness

Optional Garnishes

  • ¼ cup fresh parsley chopped
  • Extra Parmesan cheese for topping
  • Red pepper flakes for extra spice

Instructions
 

Step 1: Prep the Chicken

  • Rub the chicken breasts with olive oil and sprinkle them evenly with Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper.

Step 2: Assemble in the Crockpot

  • Place the seasoned chicken breasts into the slow cooker.
  • Pour in the diced tomatoes with green chilies and chicken broth over the chicken.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and fully cooked.

Step 3: Shred the Chicken

  • Once cooked, remove the chicken from the crockpot and shred it using two forks. Then, return it to the slow cooker.

Step 4: Make It Creamy

  • Add the cream cheese (cubed) and heavy cream to the crockpot. Stir well and cover again, letting it cook for another 10-15 minutes until the cheese melts into a creamy sauce.
  • Stir in shredded Parmesan cheese to enhance the creamy texture and flavor.

Step 5: Cook the Pasta

  • While the sauce is coming together, cook the penne pasta according to the package instructions. Drain and toss with a tablespoon of butter (optional, for extra richness).

Step 6: Combine Everything

  • Add the cooked pasta into the crockpot and stir well to coat everything in the creamy Cajun sauce.

Step 7: Serve and Enjoy!

  • Garnish with fresh parsley, extra Parmesan cheese, and red pepper flakes if desired. Serve hot and enjoy!
