For the Dip:
- 2 cups cooked shredded chicken (about 2 medium chicken breasts)
- 8 oz cream cheese softened
- 1/2 cup ranch dressing
- 1/2 cup buffalo sauce adjust to taste
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup crumbled blue cheese optional, for extra flavor
- 1 tablespoon garlic powder optional
For Serving:
- Tortilla chips crackers, or fresh veggies (celery, carrots, etc.)
Step 1: Prepare the Chicken
- If you're not using pre-cooked chicken, start by cooking the chicken breasts. You can bake, boil, or sauté them until they’re fully cooked. For quicker prep, I love using a rotisserie chicken from the store — just shred it with a fork.
- Once your chicken is cooked, use two forks or a hand-held shredder to shred it into bite-sized pieces. This will help it mix well with the other ingredients in the dip.
- Pro Tip: Make sure your chicken is finely shredded so it melts seamlessly into the dip, giving you that creamy texture you want.
Step 2: Set Up Your Crockpot
- Lightly spray the inside of your Crockpot with cooking spray or line it with a slow cooker liner for easy cleanup.
- Cut the softened cream cheese into cubes and place them in the Crockpot. This helps it melt evenly as the dip cooks.
- Pro Tip: Always soften your cream cheese before adding it to the Crockpot. Cold cream cheese can create lumps and make it harder to get a smooth, creamy texture.
Step 3: Mix the Ingredients
- Add the shredded chicken, ranch dressing, buffalo sauce, and shredded cheeses (cheddar, mozzarella, and optional blue cheese) to the Crockpot with the cream cheese.
- Using a spoon, gently stir the ingredients together. Ensure everything is evenly mixed, so the sauce and cheese coat the chicken evenly.
- Pro Tip: If you like your dip extra creamy, feel free to add an extra tablespoon of ranch dressing or buffalo sauce to suit your taste.
Step 4: Cook the Dip
- Cover the Crockpot and set it to low heat. Let it cook for 2-3 hours, stirring occasionally to ensure everything is blending together smoothly. If you're in a rush, you can cook it on high heat for 1-2 hours, but be sure to stir more frequently.
- Pro Tip: Stir the dip every 30 minutes to prevent the cheese from clumping or sticking to the sides.
Step 5: Serve and Enjoy
- Once the dip is melted and creamy, give it a final stir. It should have a smooth, cheesy texture with all the flavors fully blended.
- Scoop the dip into a bowl or serve directly from the Crockpot if you’re keeping it warm for a party.
- Serve the dip with your choice of tortilla chips, crackers, or fresh veggies like celery and carrots for dipping.
- Pro Tip: If you want to keep the dip warm for a long period (like during a party), keep the Crockpot on the "keep warm" setting to avoid overcooking or drying it out.
