Creamy Salmon Alfredo Pasta

Ingredients
  

For the Salmon:

  • 2 salmon fillets about 6 oz each
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional, for extra flavor
  • Juice of ½ lemon

For the Pasta:

  • 12 oz fettuccine or pasta of choice
  • 1 tablespoon salt for boiling water

For the Alfredo Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg optional, for extra depth
  • ½ cup reserved pasta water as needed for sauce consistency

For Garnish (Optional):

  • Fresh parsley chopped
  • Extra Parmesan cheese
  • Red pepper flakes for a little heat

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the fettuccine and cook according to the package instructions until al dente.
  • Reserve ½ cup of pasta water before draining.
  • Drain the pasta and set aside.

Step 2: Cook the Salmon

  • Pat the salmon fillets dry with a paper towel and season with garlic powder, onion powder, salt, black pepper, and paprika.
  • Heat olive oil in a large skillet over medium heat.
  • Place the salmon skin-side down and cook for 3-4 minutes.
  • Flip and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily.
  • Remove the salmon from the skillet and set aside.

Step 3: Make the Alfredo Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the heavy cream and stir well.
  • Gradually add the grated Parmesan cheese, stirring continuously until melted and smooth.
  • Season with salt, black pepper, and nutmeg.
  • If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Step 4: Combine Everything

  • Add the drained pasta to the Alfredo sauce and toss to coat.
  • Flake the cooked salmon into bite-sized pieces and gently fold it into the pasta.
  • Let everything warm through for about 1-2 minutes.
  • Remove from heat and garnish with fresh parsley, extra Parmesan, and red pepper flakes if desired.
