Ingredients
  

  • 4 bone-in or boneless pork chops about 1-inch thick
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup milk or water for a thinner sauce
  • 1 small onion finely chopped (optional but adds great flavor)
  • 2 cloves garlic minced
  • 1 tbsp olive oil or butter
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper
  • ½ tsp paprika optional, adds a little extra flavor
  • ½ tsp dried thyme or Italian seasoning
  • 1 cup sliced mushrooms fresh or canned, optional but recommended

Instructions
 

Step 1: Season and Sear the Pork Chops (5-7 minutes)

  • Pat the pork chops dry with a paper towel—this helps them brown better.
  • Season both sides with salt, pepper, paprika, and thyme.
  • Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat.
  • Once the pan is hot, add the pork chops and sear for about 3 minutes per side until golden brown. (No need to cook them all the way through yet—they’ll finish cooking in the sauce!)
  • Remove the pork chops from the pan and set them aside.
  • Pro Tip: Don’t overcrowd the pan! If your skillet is small, sear the pork chops in batches to get a nice, crispy crust.

Step 2: Sauté the Aromatics (3-4 minutes)

  • In the same skillet, add the chopped onions and mushrooms (if using) and cook for 2 minutes until softened.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • This step makes a huge difference in flavor! Cooking the onions and garlic before adding the sauce helps bring out their natural sweetness.

Step 3: Make the Mushroom Sauce (2 minutes)

  • Pour in the cream of mushroom soup and ½ cup of milk (or water).
  • Whisk everything together until smooth and well combined.
  • Pro Tip: If the sauce looks too thick, add a little more milk or water, a tablespoon at a time, until you reach your desired consistency.

Step 4: Simmer the Pork Chops (15-20 minutes)

  • Return the pork chops to the skillet, nestling them into the sauce.
  • Reduce the heat to low, cover with a lid, and let them simmer for 15-20 minutes. Flip them halfway through to ensure even cooking.
  • Once the pork chops reach an internal temperature of 145°F (63°C), they’re ready to serve!
  • The longer they simmer, the more tender they get—just be careful not to overcook, or they may dry out.

Step 5: Serve and Enjoy!

  • Remove from heat and let the pork chops rest for a few minutes before serving.
  • Spoon extra sauce over the top and pair with mashed potatoes, rice, or veggies.
  • Pro Tip: If you want an extra touch of flavor, sprinkle fresh parsley or grated Parmesan on top before serving. It adds a nice pop of color and taste!
