Chocolate Chip Banana Bars

This recipe is a great way to use up those overripe bananas sitting on your counter. Instead of tossing them out, turn them into something delicious! These bars come together quickly with simple ingredients, making them perfect for busy weeknights, family gatherings, or even as a lunchbox treat.

Ingredients
  

Wet Ingredients:

  • 2 ripe bananas mashed
  • ½ cup unsalted butter melted
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon optional, but adds great flavor

Add-ins:

  • ¾ cup chocolate chips semi-sweet or milk chocolate
  • ½ cup chopped walnuts optional

Instructions
 

Step 1: Preheat & Prepare the Pan

  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan with nonstick spray or line it with parchment paper for easy removal.

Step 2: Mash the Bananas

  • In a large mixing bowl, mash two ripe bananas with a fork until smooth. A few small lumps are okay!

Step 3: Mix the Wet Ingredients

  • To the mashed bananas, add melted butter, brown sugar, granulated sugar, egg, and vanilla extract. Whisk until well combined.

Step 4: Combine the Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).

Step 5: Mix Wet and Dry Ingredients

  • Slowly add the dry ingredients into the wet ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix!

Step 6: Add the Chocolate Chips

  • Fold in the chocolate chips (and walnuts if using) until evenly distributed.

Step 7: Bake the Bars

  • Pour the batter into the prepared baking pan and spread it evenly. Bake for 22-27 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Step 8: Cool & Serve

  • Let the bars cool in the pan for about 15 minutes, then transfer them to a wire rack. Once completely cool, cut into squares and enjoy!
