If you love a good cheesesteak but want something a little lighter, the Chicken Philly Cheesesteak is the perfect option! This sandwich is packed with juicy, seasoned chicken, melted cheese, and sautéed peppers and onions, all piled onto a warm, toasted hoagie roll. It's just as flavorful as the classic beef version but with a fresh, delicious twist.

Ingredients
  

For the Chicken Philly Filling:

  • 2 boneless skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 1 small onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • ½ cup mushrooms optional

For the Sandwich:

  • 4 hoagie rolls or any soft sub rolls
  • 4 slices provolone cheese or American cheese
  • 1 tablespoon mayonnaise optional, for spreading

Instructions
 

Step 1: Prepare the Ingredients

  • Slice the chicken breasts into thin strips. This helps them cook quickly and stay tender.
  • Cut the onion and bell peppers into thin slices. If using mushrooms, slice them as well.

Step 2: Cook the Chicken

  • Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  • Add the chicken slices and season with garlic powder, onion powder, paprika, salt, black pepper, and Italian seasoning.
  • Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the pan and set it aside.

Step 3: Sauté the Veggies

  • In the same pan, add the sliced onions and bell peppers (and mushrooms if using).
  • Sauté for 5 minutes, stirring occasionally, until the vegetables are soft and slightly caramelized.
  • Return the cooked chicken to the pan and stir everything together.

Step 4: Melt the Cheese

  • Reduce the heat to low and place the sliced cheese on top of the chicken and veggie mixture.
  • Cover the pan with a lid for about 1-2 minutes, until the cheese is melted.

Step 5: Toast the Hoagie Rolls

  • While the cheese is melting, lightly toast the hoagie rolls in a toaster or oven for 2-3 minutes.
  • If you like, spread a thin layer of mayonnaise on the inside of the rolls for extra flavor.

Step 6: Assemble & Serve

  • Using tongs or a spatula, scoop the chicken and cheesy veggie mixture onto the toasted hoagie rolls.
  • Serve hot and enjoy your Chicken Philly Cheesesteak!
