For the Chicken Philly Filling:
- 2 boneless skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- 1 small onion sliced
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- ½ cup mushrooms optional
For the Sandwich:
- 4 hoagie rolls or any soft sub rolls
- 4 slices provolone cheese or American cheese
- 1 tablespoon mayonnaise optional, for spreading
Step 1: Prepare the Ingredients
Slice the chicken breasts into thin strips. This helps them cook quickly and stay tender.
Cut the onion and bell peppers into thin slices. If using mushrooms, slice them as well.
Step 2: Cook the Chicken
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Add the chicken slices and season with garlic powder, onion powder, paprika, salt, black pepper, and Italian seasoning.
Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the pan and set it aside.
Step 3: Sauté the Veggies
In the same pan, add the sliced onions and bell peppers (and mushrooms if using).
Sauté for 5 minutes, stirring occasionally, until the vegetables are soft and slightly caramelized.
Return the cooked chicken to the pan and stir everything together.
Step 4: Melt the Cheese
Reduce the heat to low and place the sliced cheese on top of the chicken and veggie mixture.
Cover the pan with a lid for about 1-2 minutes, until the cheese is melted.
Step 5: Toast the Hoagie Rolls
While the cheese is melting, lightly toast the hoagie rolls in a toaster or oven for 2-3 minutes.
If you like, spread a thin layer of mayonnaise on the inside of the rolls for extra flavor.
Step 6: Assemble & Serve
Using tongs or a spatula, scoop the chicken and cheesy veggie mixture onto the toasted hoagie rolls.
