For the Chicken and Vegetables:
- 1 pound 450g boneless, skinless chicken breasts, cut into thin strips
- 1 red bell pepper thinly sliced
- 1 yellow bell pepper thinly sliced
- 1 green bell pepper thinly sliced
- 1 medium red onion thinly sliced
- 2 tablespoons olive oil
For the Fajita Seasoning:
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper optional, for extra heat
For Serving:
- 8 small flour or corn tortillas warmed
- Fresh lime wedges
- Optional toppings: shredded cheese sour cream, guacamole, salsa, chopped cilantro
Step 1: Prepare the Ingredients
Start by slicing the chicken breasts, bell peppers, and onions into thin strips.
In a small bowl, mix all the fajita seasoning ingredients. Set aside.
Step 2: Marinate the Chicken
Place the chicken strips in a mixing bowl.
Drizzle 1 tablespoon of olive oil over them.
Sprinkle half of the fajita seasoning on the chicken and toss until evenly coated.
Let it sit while you prep the veggies.
Step 3: Cook the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the seasoned chicken strips in a single layer.
Cook for 5-6 minutes, flipping occasionally, until fully cooked and slightly browned.
Remove the chicken from the skillet and set aside.
Step 4: Cook the Vegetables
In the same skillet, add the sliced bell peppers and onions.
Sprinkle the remaining fajita seasoning over the vegetables.
Sauté for 5-7 minutes, stirring occasionally, until the veggies are tender yet slightly crisp.
Step 5: Combine and Serve
Return the cooked chicken to the skillet with the vegetables.
Stir everything together and cook for 1-2 minutes to heat through.
Serve the chicken and veggies hot with warmed tortillas and your favorite toppings.
