Ingredients
  

For the Chicken and Vegetables:

  • 1 pound 450g boneless, skinless chicken breasts, cut into thin strips
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 medium red onion thinly sliced
  • 2 tablespoons olive oil

For the Fajita Seasoning:

  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for extra heat

For Serving:

  • 8 small flour or corn tortillas warmed
  • Fresh lime wedges
  • Optional toppings: shredded cheese sour cream, guacamole, salsa, chopped cilantro

Instructions
 

Step 1: Prepare the Ingredients

  • Start by slicing the chicken breasts, bell peppers, and onions into thin strips.
  • In a small bowl, mix all the fajita seasoning ingredients. Set aside.

Step 2: Marinate the Chicken

  • Place the chicken strips in a mixing bowl.
  • Drizzle 1 tablespoon of olive oil over them.
  • Sprinkle half of the fajita seasoning on the chicken and toss until evenly coated.
  • Let it sit while you prep the veggies.

Step 3: Cook the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken strips in a single layer.
  • Cook for 5-6 minutes, flipping occasionally, until fully cooked and slightly browned.
  • Remove the chicken from the skillet and set aside.

Step 4: Cook the Vegetables

  • In the same skillet, add the sliced bell peppers and onions.
  • Sprinkle the remaining fajita seasoning over the vegetables.
  • Sauté for 5-7 minutes, stirring occasionally, until the veggies are tender yet slightly crisp.

Step 5: Combine and Serve

  • Return the cooked chicken to the skillet with the vegetables.
  • Stir everything together and cook for 1-2 minutes to heat through.
  • Serve the chicken and veggies hot with warmed tortillas and your favorite toppings.
