Ingredients
  

For the Salad

  • 2 cups cooked pasta rotini, penne, or bowtie
  • 2 cups cooked chicken breast diced or shredded
  • 4 cups romaine lettuce chopped
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ½ cup grated Parmesan cheese
  • ½ cup Caesar dressing store-bought or homemade
  • ½ teaspoon black pepper
  • ½ teaspoon salt

For the Homemade Croutons (Optional)

  • 2 cups cubed bread French bread or sourdough works well
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For Extra Garnish (Optional)

  • Fresh parsley chopped
  • Extra Parmesan shavings
  • A squeeze of lemon for added freshness

Instructions
 

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook according to package instructions until al dente.
  • Drain the pasta and rinse it with cold water to stop the cooking process. Set aside.

Step 2: Prepare the Chicken

  • If using pre-cooked chicken, shred or dice it into bite-sized pieces.
  • If cooking fresh chicken, season it with salt and pepper.
  • Heat a skillet over medium heat with a tablespoon of olive oil and cook the chicken until golden brown and fully cooked (about 6-8 minutes per side).
  • Let the chicken rest for a few minutes before slicing.

Step 3: Make the Croutons (Optional)

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, toss cubed bread with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  • Spread the bread cubes on a baking sheet in a single layer.
  • Bake for 10-12 minutes or until golden and crispy, stirring halfway through.
  • Let cool before adding to the salad.

Step 4: Assemble the Salad

  • In a large mixing bowl, combine the cooked pasta, romaine lettuce, cherry tomatoes, red onion, and chicken.
  • Add the grated Parmesan cheese and black pepper.
  • Pour in the Caesar dressing and toss gently to coat all ingredients evenly.
  • Top with homemade or store-bought croutons and any optional garnishes.
  • Serve immediately or refrigerate for up to 24 hours before serving.
