- 2 boneless skinless chicken breasts, sliced into thin strips
- 1 tablespoon olive oil or sesame oil
- 2 cups mixed vegetables e.g., broccoli, bell peppers, carrots, and snap peas
- 2 tbsp low-sodium soy sauce
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh ginger grated
- 2 garlic cloves minced

Heat olive oil in a large skillet or wok over medium-high heat.
Add the chicken strips and cook for 5-6 minutes until browned and cooked through. Remove from the pan and set aside.
In the same pan, add the mixed vegetables and stir-fry for 4-5 minutes until tender-crisp.
Return the chicken to the pan. Stir in soy sauce, honey, ginger, and garlic, cooking for 2 more minutes to combine flavors.
Garnish with sesame seeds and green onions if desired, then serve immediately.
