For the Salmon Bites:
- 1 lb fresh salmon skin removed, cut into bite-sized cubes
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 egg beaten
- ¾ cup panko breadcrumbs for extra crispiness
- 2 tablespoons cornstarch helps with crispiness
- Oil for frying vegetable or avocado oil
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha adjust for spice level
- 1 teaspoon honey
- 1 teaspoon lime juice
Optional Garnishes:
- Chopped green onions
- Sesame seeds
- Extra sriracha drizzle
Step 1: Prep the Salmon
Pat the salmon dry with a paper towel and cut it into bite-sized cubes. This helps the coating stick better.
In a bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
Step 2: Set Up the Breading Station
In a separate bowl, beat the egg.
In another bowl, mix the panko breadcrumbs with cornstarch for extra crispiness.
Step 3: Coat the Salmon
Dip each salmon piece into the seasoned flour, then into the beaten egg, and finally into the panko mixture, pressing lightly so the crumbs stick.
Step 4: Cook the Salmon Bites
Heat about ½ inch of oil in a skillet over medium-high heat. To test if the oil is ready, drop in a breadcrumb—if it sizzles, it’s good to go!
Fry the salmon bites in batches, cooking for about 2-3 minutes per side, until golden brown and crispy.
Use tongs to transfer the salmon bites to a paper towel-lined plate to drain excess oil.
Step 5: Make the Bang Bang Sauce
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
Step 6: Assemble & Serve
Drizzle the bang bang sauce over the salmon bites or toss them in the sauce for full coverage.
Garnish with green onions, sesame seeds, or an extra drizzle of sriracha.
Serve immediately with rice, salad, or as an appetizer!
