Ingredients
  

For the Salmon Bites:

  • 1 lb fresh salmon skin removed, cut into bite-sized cubes
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg beaten
  • ¾ cup panko breadcrumbs for extra crispiness
  • 2 tablespoons cornstarch helps with crispiness
  • Oil for frying vegetable or avocado oil

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust for spice level
  • 1 teaspoon honey
  • 1 teaspoon lime juice

Optional Garnishes:

  • Chopped green onions
  • Sesame seeds
  • Extra sriracha drizzle

Instructions
 

Step 1: Prep the Salmon

  • Pat the salmon dry with a paper towel and cut it into bite-sized cubes. This helps the coating stick better.
  • In a bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Step 2: Set Up the Breading Station

  • In a separate bowl, beat the egg.
  • In another bowl, mix the panko breadcrumbs with cornstarch for extra crispiness.

Step 3: Coat the Salmon

  • Dip each salmon piece into the seasoned flour, then into the beaten egg, and finally into the panko mixture, pressing lightly so the crumbs stick.

Step 4: Cook the Salmon Bites

  • Heat about ½ inch of oil in a skillet over medium-high heat. To test if the oil is ready, drop in a breadcrumb—if it sizzles, it’s good to go!
  • Fry the salmon bites in batches, cooking for about 2-3 minutes per side, until golden brown and crispy.
  • Use tongs to transfer the salmon bites to a paper towel-lined plate to drain excess oil.

Step 5: Make the Bang Bang Sauce

  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.

Step 6: Assemble & Serve

  • Drizzle the bang bang sauce over the salmon bites or toss them in the sauce for full coverage.
  • Garnish with green onions, sesame seeds, or an extra drizzle of sriracha.
  • Serve immediately with rice, salad, or as an appetizer!
