Ingredients
  

For the oats:

  • ½ cup old-fashioned rolled oats
  • ½ cup milk dairy or non-dairy
  • ¼ cup Greek yogurt
  • 1 tablespoon chia seeds for extra creaminess and fiber
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of salt

For the cheesecake layer:

  • 2 tablespoons cream cheese softened
  • 1 tablespoon Greek yogurt
  • ½ tablespoon honey

For the strawberry topping:

  • ½ cup fresh strawberries chopped
  • ½ tablespoon honey optional, if strawberries aren’t sweet enough

Instructions
 

  • Prepare the oats – In a mixing bowl, combine the rolled oats, milk, Greek yogurt, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well to combine.
  • Make the cheesecake layer – In a separate small bowl, mix together the softened cream cheese, Greek yogurt, and honey until smooth.
  • Layer it up – In a mason jar or airtight container, add a layer of the oat mixture, then a spoonful of the cheesecake mixture, and finally a layer of chopped strawberries. Repeat if needed.
  • Refrigerate overnight – Cover the jar and place it in the fridge for at least 4 hours, but overnight is best. This allows the oats to absorb the liquid and get soft and creamy.
  • Enjoy! – In the morning, give it a good stir and add any extra toppings you like, such as crushed graham crackers, more fresh strawberries, or a drizzle of honey.
