Ingredients
  

For the Filling:

  • 1 lb 450g ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 cup diced tomatoes canned or fresh
  • 2 tbsp taco seasoning

For the Topping:

  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream
  • 2 large eggs lightly beaten
  • ¼ cup chopped fresh cilantro optional

Instructions
 

Step 1: Preheat and Prep

  • Preheat your oven to 375°F (190°C).
  • Lightly grease your 9-inch pie dish or baking dish with butter or cooking spray.

Step 2: Cook the Filling

  • Heat a skillet over medium heat and add the ground beef. Break it apart with a spatula.

  • Stir in the taco seasoning and diced tomatoes. Mix well to combine all the flavors.

Step 3: Prepare the Topping

  • In a medium bowl, combine the eggs, sour cream, and half of the shredded cheddar cheese. Whisk until smooth.

Step 4: Assemble the Pie

  • Spoon the cooked filling into your prepared baking dish, spreading it evenly.
