Ingredients

  • 2 cups cooked and shredded chicken rotisserie chicken works great!
  • ½ cup dill pickles chopped
  • ¼ cup red onion finely diced
  • ½ cup celery diced
  • ½ cup mayonnaise
  • 2 tablespoons pickle juice for extra flavor!
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste

Instructions
 

Step 1: Prepare the Ingredients

  • If you're using rotisserie or pre-cooked chicken, shred it into small, bite-sized pieces using two forks. If cooking from scratch, boil or bake chicken breasts, let them cool, and then shred.
  • Dice the dill pickles, celery, and red onion into small pieces so every bite has a bit of crunch and flavor.

Step 2: Make the Dressing

  • In a large mixing bowl, whisk together the mayonnaise, pickle juice, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
  • Stir in the fresh dill if you're using it—it adds a fresh, herby touch!

Step 3: Combine Everything

  • Add the shredded chicken, chopped pickles, red onion, and celery into the bowl with the dressing.
  • Stir everything together until well coated and creamy.

Step 4: Taste and Adjust

  • Take a small taste and adjust the seasoning if needed—add more pickle juice for tang, more mayo for creaminess, or more salt and pepper to taste.

Step 5: Chill and Serve

  • For the best flavor, cover and refrigerate for at least 30 minutes to let the flavors meld together.
