Ingredients
  

For the Chicken Pot Pie Filling:

  • 2 lbs boneless skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 cups frozen mixed vegetables peas, carrots, corn, and green beans
  • 3 medium potatoes peeled and diced
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1 tsp poultry seasoning
  • 2 tbsp butter
  • 2 tbsp all-purpose flour for thickening

For the Topping:

  • 1 can refrigerated biscuits or homemade biscuits
  • OR 1 sheet puff pastry cut into squares and baked separately

Instructions
 

Step 1: Prep the Ingredients

  • Dice the onion, potatoes, and garlic.
  • Trim any excess fat from the chicken breasts or thighs.

Step 2: Load the Crockpot

  • Place the chicken in the crockpot first.
  • Add the potatoes, onion, garlic, frozen vegetables, butter, salt, pepper, thyme, rosemary, and poultry seasoning.
  • Pour in the chicken broth. Give everything a gentle stir.

Step 3: Cook Low and Slow

  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • The chicken should be tender and easy to shred.

Step 4: Shred the Chicken

  • Use two forks to shred the chicken inside the crockpot. Stir to mix everything well.

Step 5: Thicken the Sauce

  • In a small bowl, whisk the flour into the heavy cream until smooth.
  • Pour it into the crockpot, stir well, and cook for 30 more minutes on LOW until thickened.

Step 6: Prepare the Topping

  • If using biscuits, bake them according to package directions.
  • If using puff pastry, cut it into squares and bake at 400°F (200°C) for 10-12 minutes until golden brown.

Step 7: Serve and Enjoy!

  • Spoon the creamy chicken mixture into bowls.
  • Top with a warm biscuit or a piece of puff pastry.
  • Enjoy a comforting, homemade meal!
