Ingredients
  

For the Beef Tips and Gravy

  • 2 pounds beef stew meat or sirloin, cut into chunks
  • 1 small onion chopped
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme optional
  • 1 packet 1 ounce dry onion soup mix
  • 2 tablespoons cornstarch for thickening
  • 3 tablespoons water to mix with cornstarch

For the Noodles

  • 12 ounces egg noodles
  • Water for boiling
  • 1 tablespoon butter optional, for extra richness

Instructions
 

Step 1: Prep the Beef and Ingredients

  • If using larger cuts of beef, cut them into bite-sized chunks.
  • Chop the onion into small pieces.

Step 2: Add Ingredients to the Slow Cooker

  • Place the beef chunks and chopped onion into the slow cooker.
  • Pour in the beef broth, Worcestershire sauce, and soy sauce.
  • Add garlic powder, onion powder, salt, pepper, dried thyme, and the dry onion soup mix.
  • Stir everything gently to mix the flavors.

Step 3: Cook Low and Slow

  • Cover the slow cooker with the lid.
  • Cook on low for 6-8 hours or high for 3-4 hours. The beef should be tender and easy to shred with a fork.

Step 4: Thicken the Gravy

  • In a small bowl, mix the cornstarch with 3 tablespoons of water until smooth.
  • Pour the mixture into the slow cooker and stir well.
  • Cover and cook for an additional 20-30 minutes on high until the sauce thickens.

Step 5: Cook the Noodles

  • About 15 minutes before serving, bring a large pot of water to a boil.
  • Add the egg noodles and cook according to package instructions.
  • Drain the noodles and stir in butter (if using) for extra flavor.

Step 6: Serve and Enjoy!

  • Spoon the beef tips and gravy over a plate of egg noodles.
  • Garnish with fresh parsley if desired.
  • Enjoy with a side of crusty bread or a simple salad!
