Ingredients
  

  • Bananas – 2 large overripe bananas (the riper, the sweeter!)
  • All-purpose flour – 1 cup
  • Sugar – 2 tablespoons adjust to taste
  • Baking powder – 1 teaspoon
  • Salt – ¼ teaspoon
  • Cinnamon optional – ½ teaspoon
  • Milk – ¼ cup
  • Egg – 1 large
  • Vanilla extract – 1 teaspoon
  • Oil for frying – About 1 cup vegetable or canola oil

Instructions
 

Step 1: Mash the Bananas

  • Peel the ripe bananas and place them in a mixing bowl. Use a fork or potato masher to mash them until they are smooth with just a few small lumps.

Step 2: Prepare the Batter

  • In another bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using). In a separate small bowl, mix the egg, milk, and vanilla extract.
  • Slowly add the wet ingredients to the dry ingredients and stir until combined. Then, fold in the mashed bananas. The batter should be thick but smooth.

Step 3: Heat the Oil

  • Pour the oil into a frying pan and heat it over medium heat. To check if it’s hot enough, drop a tiny bit of batter into the oil. If it sizzles and rises to the top, the oil is ready.

Step 4: Fry the Fritters

  • Using a spoon, drop small portions of batter into the hot oil. Be careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.

Step 5: Drain and Serve

  • Once the fritters are golden and crispy, use a slotted spoon to transfer them to a plate lined with paper towels to absorb excess oil. Let them cool slightly before serving.
  • Enjoy your banana fritters warm, with a dusting of powdered sugar, a drizzle of honey, or a side of whipped cream!
