White sauce pasta is a go-to meal in my kitchen. It’s quick, easy, and incredibly satisfying, making it perfect for busy weeknights, lazy weekends, or even as a comforting dish on a rainy day.

For the Pasta:
- 250 g pasta penne, fusilli, or spaghetti
- Water for boiling
- 1 tsp salt
- 1 tbsp olive oil
For the White Sauce:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk warm
- 1/2 tsp salt adjust to taste
- 1/2 tsp black pepper
- 1/4 tsp nutmeg optional, but adds warmth!
- 1/2 cup grated cheese cheddar, mozzarella, or Parmesan
Add-ins (Optional but Recommended!):
- 1/2 cup cooked chicken or shrimp
- 1/2 cup sautéed mushrooms
- 1/2 cup steamed broccoli or bell peppers
Step 1: Cook the Pasta (10 minutes)
Bring a large pot of salted water to a boil.
Add pasta and cook according to the package instructions until al dente.
Drain and toss with a little olive oil to prevent sticking. Set aside.
Step 2: Make the White Sauce (10 minutes)
In a saucepan over medium heat, melt butter.
Add flour and whisk continuously for 1-2 minutes until it turns a light golden color. (Pro Tip: This step helps remove the raw flour taste!)
Slowly pour in warm milk while whisking constantly. (I'd add cold milk, but it made my sauce grainy—warm milk is key for a smooth texture!).
Continue whisking for another 3-5 minutes until the sauce thickens.
Season with salt, black pepper, and nutmeg (if using).
Stir in grated cheese until melted and smooth.
Step 3: Combine Everything (5 minutes)
Add the cooked pasta to the sauce and toss well to coat evenly.
Stir in any add-ins like chicken, shrimp, or veggies.
Cook for another 2 minutes until everything is heated through.
Serve immediately with extra cheese or chili flakes on top!
