Equipment

  • Large pot
  • Colander
  • Saucepan
  • Whisk
  • Grater
  • Wooden spoon

Ingredients

For the Pasta:

  • 250 g pasta penne, fusilli, or spaghetti
  • Water for boiling
  • 1 tsp salt
  • 1 tbsp olive oil

For the White Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk warm
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg optional, but adds warmth!
  • 1/2 cup grated cheese cheddar, mozzarella, or Parmesan

Add-ins (Optional but Recommended!):

  • 1/2 cup cooked chicken or shrimp
  • 1/2 cup sautéed mushrooms
  • 1/2 cup steamed broccoli or bell peppers

Instructions

Step 1: Cook the Pasta (10 minutes)

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook according to the package instructions until al dente.
  • Drain and toss with a little olive oil to prevent sticking. Set aside.

Step 2: Make the White Sauce (10 minutes)

  • In a saucepan over medium heat, melt butter.
  • Add flour and whisk continuously for 1-2 minutes until it turns a light golden color. (Pro Tip: This step helps remove the raw flour taste!)
  • Slowly pour in warm milk while whisking constantly. (I'd add cold milk, but it made my sauce grainy—warm milk is key for a smooth texture!).
  • Continue whisking for another 3-5 minutes until the sauce thickens.
  • Season with salt, black pepper, and nutmeg (if using).
  • Stir in grated cheese until melted and smooth.

Step 3: Combine Everything (5 minutes)

  • Add the cooked pasta to the sauce and toss well to coat evenly.
  • Stir in any add-ins like chicken, shrimp, or veggies.
  • Cook for another 2 minutes until everything is heated through.
  • Serve immediately with extra cheese or chili flakes on top!
