Ingredients
  

Wet Ingredients

  • ½ cup 1 stick unsalted butter, softened
  • ½ cup cottage cheese blended for a smoother texture, if desired

  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the Oven – Set your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Mix the Wet Ingredients – In a large bowl, cream together the softened butter, blended cottage cheese, brown sugar, and granulated sugar until smooth and fluffy. Add the egg and vanilla extract, mixing until fully combined.
  • Combine the Dry Ingredients – In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Mix Everything Together – Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  • Add the Chocolate Chips – Fold in the chocolate chips (and nuts if using) with a spatula.
  • Scoop and Bake – Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake – Place in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they’ll firm up as they cool.
  • Cool and Enjoy – Let the cookies rest on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely. Enjoy warm or store for later!
