Ingredients
  

For the Casserole:

  • 2 cups cooked rice white or brown
  • 3 cups fresh or frozen broccoli florets chopped
  • 2 cups shredded cheddar cheese
  • 1 can 10.5 oz condensed cream of mushroom soup (or cream of chicken)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter for greasing the baking dish

Optional Add-ins:

  • 1 cup cooked shredded chicken or ham
  • 1/2 cup crumbled bacon
  • 1/2 teaspoon smoked paprika for extra flavor
  • 1/4 cup grated Parmesan cheese for added depth

Instructions
 

  • Preheat the Oven – Set your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.
  • Cook the Rice – If you haven’t pre-cooked the rice, cook 1 cup of dry rice according to package instructions to yield 2 cups of cooked rice.
  • Steam the Broccoli – If using fresh broccoli, steam it for 3-4 minutes until slightly tender but still vibrant. If using frozen, let it thaw and drain any excess water.
  • Mix the Ingredients – In a large mixing bowl, combine the cooked rice, steamed broccoli, shredded cheddar cheese, condensed soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper. Stir well to incorporate everything evenly.
  • Add Optional Ingredients – If you’re including extras like cooked chicken, bacon, or Parmesan cheese, fold them into the mixture.
  • Transfer to Baking Dish – Pour the mixture into the prepared baking dish and spread it out evenly.
  • Top with Cheese – Sprinkle additional shredded cheddar cheese over the top for a golden, melty finish.
  • Bake – Place the dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and slightly golden.
  • Let it Cool – Remove from the oven and allow it to cool for about 5 minutes before serving.
  • Serve and Enjoy – Dish out warm portions and enjoy this creamy, cheesy goodness!
